Keto blueberrry cheesecake bites

Blend 16 oz room temp cream cheese till smooth
Add in 1/2 c monkfruit
2 eggs
1/4 ts xanthum gum
1/2 tsp canilla extract

Beat till well blended

Fold in 1/4 c blueberries

Spoon into muffin tin and bake at 350 for 20 minutes

Chill in fridge before serving

Pigs in a blanket keto style!

Fathead dough
3/4 c almond flour
1 3/4 c mozzarella cheese tossed together.
Add 2 tbsp cream cheese

Melt together in microwave for 1 minute.
Stir, then microwave for 30 seconds each till melted and mixed thoroughly.

Add in
1 egg
1/2 tsp Italian seasoning
1 pinch salt

Mix well

Make 8 dough balls and flatten out put hot dog in the middle and roll around placing it seam side down on a baking sheet lined with parchment paper.

Place in oven and bake at 425 for 14-17 minutes.

1 tbsp olive oil
1 1/2 peeled and deveined shrimp
2tbsp butter
4 garlic cloves minced
1/3 c white wine
1 c heavy cream
1/2 tsp red pepper flakes
1/4 tsp dried thyme
1/2 c shredded Parmesan cheese
Salt and pepper


Cook shrimp first and set aside


Melt butter in pan add garlic and cook.


Add rest of ingredients in order and cook till well blended. Add shrimp back in and warm through and serve.

Stuffed Peppers!

4 bell peppers of your choosing sliced in half and seeds and ribs removed
Steak or chicken cooked with your favorite seasonings and 1/2 a large onion
Your favorite cheese.
Place cheese inside your bell pepper just a thin layer. Put meat and onions on top. Cover with more cheese.
Place in the oven at 350 for 20-30 minutes or until cheese is melted and browned to your desired doneness.

Pecan Pie Mug Cake!

Mix together
2 tbsp coconut flour
2 tbsp golden monk fruit
1 egg
1 tbsp almond milk
1 tbsp melted butter
1/2 tsp baking powder
1/2 tsp vanilla extract
Place in a mug twice the size of the batter that has been greased with coconut oil. Microwave 1-3 minutes.
In a pan melt 2tbsp of butter with 1 tbsp golden monk fruit 1/2 tsp vanilla and 1 oz pecans till melted and well coated
Top cake with pecan mixture and enjoy.

Low Carb Blueberry Muffins!

Blend together wet ingredients
3 eggs that have been beaten to add air in them.
1/2 c sour cream
1tbsp lemon juice
1 lemon zested
1tsp vanilla extract
Add in dry ingredients 2c almond flour
1/3 c sweetener of choice
1.5 tsp baking powder
Mix well. Place in muffin tin either silicone or paper liners
Press in 1/2 c blueberries.
Makes 8 muffins.
Bake at 350 for 20-30 minutes

Keto lasagna

Keto lasagna!
Meat filling
1 lb pork sausage
1 lb ground beef
2 tbsp butter
Salt and pepper
1 jar marinara sauce
Noodles
5-6 zucchini roughly chopped or sliced thinly with a mandolin
Cook lightly in butter with spices
32 oz ricotta cheese
1 lb mozzarella cheese
Layer in a pan zucchini 1/2 meat sauce mozzarella cheese another 1/3 zucchini then the ricotta cheese and spices here add the other 1/2 of meat sauce. The last 1/3 of zucchini and the last 1/2 lb of mozzarella.
Place in the oven at 375 for 25 minutes
Let rest for 10-15 minutes before enjoying.
