Pumpkin chocolate chip cookies

Beat together
1/3 c butter softened
3/4 c monk fruit
1tsp vanilla extract
1 large egg
1/2 c pumpkin purée

Then mix in 1 tsp pumpkin pie spice

Then add
1.5 c almond flour
1/2 tsp baking powder
1/2 tsp xantham gum
1/4 tsp salt

Mix in 3/4 c Lilly’s chocolate chips

Place on baking sheet lined with parchment paper and bake at 350 for 12-13 minutes and crack salt over the top if you like

Makes 24 small cookies ?

Mix together.
1 1/2 c almond flour
1/3 c cocoa powder and 2tbsp Dutch cocoa powder
2 1/4 tsp baking powder
1/2 tsp salt
1/3 c water
3 eggs
1/3 c monk fruit
1 1/2 tsp vanilla extract
Pour into a cake pan greased lined with parchment paper and bake at 350 for 14 minutes or till firm.
Blueberry compote
2 cups blueberry
1/3 c monk fruit
3 tbsp water
Cook in pan till reduced.

Instant Pot Easy Creamy Keto Taco Soup

Instant pot easy creamy keto taco soup!
Sauté
1 lb ground beef or turkey
1 tbsp oil
1 small onion diced
2-3 cloves of garlic minced
2tbsp taco seasoning.
Once cooked through add 1 bell pepper diced in and sauté for another minute and add 1 can of rotel or diced tomatoes.
Add 1 can of beef broth and set for 10 minutes on manual with a natural release.
Once done stir in 1 c heavy cream or 8 oz of cream cheese till melted and mixed through.
Serve with avocado, cheese, sour cream or your favorite toppings.

1 tbsp butter melted
1 egg beaten
1 tbsp sour cream
2 tbsp almond flour
2 tbsp powdered sweetener. I used swerve
1 tsp baking powder
1 tsp vanilla
2 tsp pumpkin pie spice
1/2 tsp cinnamon
Melt butter and beat egg in separate containers
Combine all ingredients together and stir well. Make sure there are no clumps - you do not want flour pockets.
Pour into a microwavable mug and make sure it has room to double in size
Microwave for 90 seconds
Dust with nutmeg to taste or top with your favorite low carb option.

Gluten-free Keto tortillas!

1 cup almond flour

1 tbsp xanthum gum

1/2 tsp baking powder

1 egg

1tbsp water

Add salt to taste

Blend all ingredients together in food processor or blender until dough ball forms

Cover in plastic wrap and knead for 1 minute

Let rest for 15 minutes- this is important

Separate into 4 balls and roll out between parchment paper until about 6 inches

Use a bowl to help. You can use the scraps to make a 5th tortilla

Cook in a preheated skillet till desired doneness. Should become white in color. Takes less than a minute.
